HOSPITALITY OPERATIONS MANAGEMENT-Explain how and why the root cause(s) impact on performance.
This is an Evaluative piece of writing. You need to Identify an operational issue that impacts on performance within somewhere you work or have worked or are familiar with and critically apply key concepts and principles contained in lecture notes, recommended books and journal articles to:
• Apply an appropriate model(s) to identify the root cause(s) of the issue.
• Explain how and why the root cause(s) impact on performance.
• Evaluate the application of theoretical principles from operational management to resolve the issue.
You are required to write a piece of evaluative written work that mainly uses the books and journal articles referenced in the MDRS, lecture notes and Additional Reading folders.
• By “operational issue” we mean something that is happening at the operational level that is having a negative impact on performance. Examples could include a process that doesn’t meet the needs of customers, excessive waiting times for customers, inconsistent food quality or something else that is affecting the ability to achieve a performance objective.
• By “evaluative written work” we mean that that you do not have to present the work exactly in an essay or report format. It can contain headings, diagrams and tables in the main body but it does not need a contents page, executive summary or recommendations section. We also see no need to include appendices. NOTE, as far as we are concerned in this module, words in tables, diagrams and reference lists are not included in your word count.
• It is suggested that, in the introduction, you need to very briefly describe the operation and set out the points that you are going to make.
